Power greens are the new broccoli. When I serve this dish and encourage the non-vegetable fans to try it, they are usually pleasantly surprised. So make it for your kids without the chili, or throw it in with some pasta. They may not even realize they are eating something healthy.

Sauteed Power Greens with Garlic and Lemon

Prep Time: 10 minutes
Cook Time: 2 minutes
Course: Appetizer
Servings: 4

Equipment

  • 1 Medium size skillet

Ingredients

  • 1 cup Kale
  • 1 cup swiss chard
  • 1 cup spinach
  • 1 cup rainbow chard
  • 1 tbsp avocado oil
  • 4 cloves of garlic
  • 4 tbsp water
  • 1 lemon
  • 1 chili flakes add according to taste
  • 1 salt add according to taste

Instructions

  • prep vegetables. Wash greens thoroughly. chop garlic. slice lemon in half
  • Heat the skillet to medium heat and add the oil and Garlic.  Make sure the garlic does not burn.
    Once it starts to brown, add the greens, the water and stir. Once the greens start to wilt, squeeze the lemon juice over them and let the juice cook for 20- 30 more seconds.    Add salt and chili flakes to taste. Voila! It’s that simple.
